EASY EATS: Creamy Avocado Pesto Pasta

Growing up, I don't think I've ever had an avocado in a savory dish. I usually ate it frozen and mixed with condensed milk, or blended to make a smoothie, or as an ice cream. I mean, it is a fruit, therefore it should be sweet, right? 

It was only until I began watching Youtube videos that I discovered the wonder of... avocado toast lol. Bread (preferably sourdough) + avocado + sunny side up egg + pepper, salt & chilli flakes? SO SIMPLE YET SO GOOD. This blog post of mine back in 2012 is a proof of my confusion re: savory avocado dishes LOL.

Aside from avocado toast, I usually like substituting butter with avocado in baked goods. I'll write about those some other time. Today, however, I'm going to show you how I do my Creamy Avocado Pesto Pasta because IT'S YUMMY, AND SO EASY TO MAKE!

(.....if you have a food processor anyway)

  • Spaghetti Pasta Noodles
  • 1/3 cup Extra Virgin Olive Oil
  • 1 whole avocado
  • 1 cup spinach
  • a handful of basil
  • 1/2 raw walnuts
  • 2 cloves of garlic
  • Salt & Pepper to taste
  • *1/4 cup water (used this only because I have a shitty blender)
  • Grated Parmesan Cheese

  1. Prepare spaghetti as instructed on the package
  2. Combine all the rest of the ingredients (aside from the parmesan cheese) in your food processor/blender, and blend until smooth and creamy. 
  3. Plate your pasta on a plate, add pesto sauce, and sprinkle parmesan cheese before serving
  4. ......and you're done!
Freaking easy, right? Just remember that this is a really heavy, creamy dish, so go easy on the sauce. But otherwise, enjoy! ;)

  1. I love savory avocado dishes! I prefer them to the usual sweet avocado route. PLUS pesto is heaven so I will def try this. Baka lang maumay ako sa avocado. Hahha
